A Letter to a Friend from Kris

I received an email recently from a friend lamenting all the illness and death in her circle of friends and family. I sent this letter back to her. It has a message for everyone in this day of manufactured food.

Over and over I read statements such as this in magazines and books - "It is generally accepted that a diet high in saturated fat and cholesterol increases the risk for heart disease."  WRONG! There is a wealth of info that challenges this idea, and addresses the issue of carbohydrate rather than fat. This section presents a number of these resources.

The Modern Nutritional Diseases And How to Prevent Them : Heart Disease, Stroke, Type-2 Diabetes, Obesity, Cancer

This book lays out in excellent detail the nutritional and biochemical reasons why excessive carbohydrates and essential fatty acid imbalance, not saturated fat and cholesterol, are the main reasons why we suffer an epidemic of these degenerative diseases. A good book to study and give to your doctor when he/she tries to push pills instead of nutritional therapy for your "high cholesterol".  A word of caution - Some of the books recommended in the last chapter, "What Do You Do Now?", have a confusing anti-saturated fat message, so study Nourishing Traditions first, as a source of general advice on eating, and the other books for guidance on restricting carbohydrates. Although the book mentions a 40-30-30 carb, protein, fat meal plan, actually it works better to limit carbs, get adequate protein, and get plenty of calories from good fats, which can work out to a 20-20-60 distribution of calories, keeping in mind that good fats come from pastured animals. I have communicated with the authors by email, and they agree that this is true. They report that they are supporters of the Weston A Price Foundation.

Details all the many ways that our bodies suffer if we do not get adequate omega-3 fatty acids - especially in the area of mental illness.

Beating Cancer with Nutrition 
by Patrick Quillan, PhD, RD, CNS   Summary from back page & - Providing Optimal Nutritional Guidelines to Improve Outcome for Medically Treated Cancer Patients.
This book is the type of book you can show to your doctor if you are facing cancer treatment. It also has lots of good information for preventing cancer and healing.  Unfortunately there is confusing information on fats, as Dr. Quillin does not make the distinction between commercial fats and high quality animal fats from pastured animals, which are a source of important anticancer nutrients such as CLA, so when you see comments to limit red meat & fat, especially saturated fat, rephrase that to say "fat from confinement raised animals and refined vegetable oils." He also advocates the use of modern soy products, which I do not recommend. I suggest ignoring the recipe chapter, because of the confusion caused by the low fat & soy recommendations.

The Crazy Makers - How the Food Industry is Destroying Our Brain and Harming Our Children  Carol N. Simontacchi - Author - a review

"In The Crazy Makers, nutritionist Carol Simontacchi reveals that brand-name consumer food producers may be putting items on the market that redefine what we commonly think of as "food." From infant formulas to supposedly health-conscious packaged meals, these pseudo-foods may be causing chemical levels in the brain to rise to alarming heights."  Based on new research, epidemiological evidence, and a formal study of schoolchildren's eating habits conducted by Simontacchi, The Crazy Makers will open your eyes as it identifies how the latest food products may be driving you crazy - and will tell you what you can do about it."

This book should be read by every parent who is concerned about their child's health, but be aware of some minor shortcomings. She highlights the importance of getting adequate omega-3 fatty acids, suggesting flax oil and fish oil capsules. Flax oil is highly perishable, so freshly ground flax seed is recommended. Good quality fresh liquid fish oil is a cheaper and more practical way to omega-3 essential fats. Along the same line she includes powdered milk in recipes, which I don't recommend because of the damage to milk caused by the drying process. Whole raw milk is a much better choice (f you can find it). Grains are also used frequently in recipes, but with no mention of the importance of proper treatment of whole grains to release their nutrients, to say nothing of the dangers of excess grain consumption. And beware of artificial sweeteners.
